I must say Christmas is my favorite holiday, from the decorations to the smell of a fresh-cut Christmas tree being decorated by the family. To me, the house just feels warmer and more welcoming with the scent of baked cookies and the glow from the fireplace as it crackles during dinner.
The best part about this holiday is that you can celebrate all month long. Between office holiday gatherings and gift exchanges with friends over wine and old black-and-white Christmas movies, there are several ways to celebrate the season. This week I would like to offer you a few ideas on how to celebrate with friends and co-workers throughout the month.
As you may know, I am in charge of holiday celebrations at the Fish House and Jackson’s Steakhouse. With the variety of rooms we provide and the types of events that I have planned and executed over the years, I’m inspired to share some of my best ideas with you. Time to bring out the tried-and-true pie and cake recipes that all the family has come to love and look forward to every year. In every family, someone has perfected the staples; pumpkin pie, apple pie, pecan pie and so on. If you are not one of those lucky ones that make that family favorite, you are probably the one that gets to take new and interesting desserts to the family dinners. That would be me. I never take the same dessert to the holiday festivities. I always try to do something I know no one else would even think of doing, but still has that “Holiday” element to it.
This year I wanted to use the element of cranberries. There are not many desserts that use cranberries, and why only use them in a sauce? You can use fresh or dried cranberries for this recipe. If using dried cranberries, reconstitute them first. I like to let mine marinate overnight in orange juice, or an orange liqueur like Grand Marnier. Just be sure to squeeze out any excess liquid. The Fish House celebrates New Year’s Eve with a four-course wine dinner, live music, and complimentary champagne toasts at midnight!
On December 31, beginning at 6:00 p.m., the Fish House will offer a special dinner in celebration of New Year’s Eve. This special menu, created by Chef Billy Ballou, features four delicious courses paired with wines selected by Beverage Director William Morse and Premier Beverage Company.
Some highlights of the menu are an appetizer selection of a Butternut Squash Tart with roasted butternut squash, Alabama chèvre, and fresh herbs paired with Peter Lehmann Layers White 2010, Barossa and Adelaide, Australia. A dessert selection: Roasted Pear and Hazelnut Parfait, layered with roasted-pear mascarpone, hazelnut nougat, and zinfandel-poached pears paired with Marqués de Cáceres Satinela 2009, Rioja, Spain.

Holiday Greetings!

We are right in the middle of a bustling holiday season at our house. What a wonderful time of year! It’s my favorite. We have had so many of you coming over to celebrate the season! We are getting ready to celebrate the beginning of a new year with a four-course wine dinner on New Year’s Eve. We will have two seatings to accommodate those wishing to participate in this year’s Pensacola Pelican Drop Celebration on Palafox. We will also have a complimentary champagne toast and live music from Jerry Dawson of The Shiz accompanied by band members of The Astronauts. For reservations, call Melissa or Bianca at 850-433-9450. Down on Palafox Street, our Great Southern Events team will be hosting New Year’s Eve in the courtyard on the corner of Palafox and Government streets. There will be a bar serving delicious raspberry margaritas, mixed drinks, beer and wine. Chef Irv Miller from our sister restaurant, Jackson’s Steakhouse, will be serving a Pensacola Cheese-Steak Sandwich with caramelized onions and hot pepper cheese sauce for $7.00. The courtyard will open at 5:00 p.m. for bar service with sandwich service beginning at 6:00 p.m. Be sure to stop by and say hi so we can wish you a happy 2012!
2012 will bring Great Southern Restaurant Week. The Fish House, Jackson’s Steakhouse and Atlas Oyster House will once again team up to present Winter Restaurant Week, January 24 – 28, 2012. The Grits Girl recently sat down with local artist Ashton Howard to hear all about what inspires him and why he and his beautiful wife Emilie chose to move back to Pensacola and live. If you haven’t had the opportunity to see Ashton’s work, check out his website, www.ashtonhoward.com, before you read this article. There is a certain quality about his work that we find provocative, bold, balanced yet gentle, idealistic and dreamlike. Ashton creates beautiful images in tribute to the people and world around him that he draws his inspiration from.
GG: Did you pick art or did art pick you? Did you or do you have any other career aspirations?
A.H. I think the answer would be both! I have always loved to create and I have been into art since my early high school years. I started out drawing, spray-painting, and eventually was led to traditional painting on canvas by 12th grade. I knew that I had some talent and was producing some good art and that was fun. It was not until a few years later that a trip to California landed me a job as a surf instructor, and that is when I believe art picked me. Halloween candy inspires sweet cocktail

Now that October is finally here, many people start thinking about the usual fall festivities — like football, leaves changing color, and cooler weather. But personally, I think of Halloween! At my house, the month of October is spent deciding the theme of this year’s haunted house, making the subsequent gory decorations and transforming the yard into a creepy scene of blood, guts and pretty much anything that will terrify the neighbors.
Also, one of the best parts of the holiday is seeing all the creative costumes, and, of course, throwing the perfect Halloween party so that all your friends have a place to show them off. So while everyone else is thinking of the perfect costume to wow their friends, I decided (more…)

Good Grits Girls bake for a good cause. 
Tuesday, October 25, 5:00 p.m. until 7:00 p.m., Twelve Good Grits Girls, employees of the Great Southern Restaurant Group (The Fish House, Atlas Oyster House and Jackson’s Steakhouse), will join together on the Fish House Deck to submit over 1000 cupcakes to the public for judging. The winner will be crowned the Great Southern Cupcake Queen. Judges are our own Great Southern pastry chefs Trina Confusione (Fish House) and Miko Franklin (Jackson’s Steakhouse), and Partners/Owners Mrs. Collier (Cate) Merrill and Pensacola Celebrity Chef Jim Shirley.
People’s Choice: The public will pay 5 dollars for a chance to taste all of the cupcakes. Cupcake tasters will receive two voting tickets. After tasting cupcakes at each station, the guests will leave their tickets with their favorite baker. The baker who has the most cards will win people’s choice. Prizes for the winner will be donated by the restaurant.
100% of the tasting fees will be donated to the American Cancer Society.
Judges will announce their choice along with the crowd’s favorite at 6:30 p.m.
Door Prizes: Provided for attending guests by area boutiques and salons such as Style Downtown and Escape Wellness Spa.
Drink Specials: Pomegranate and ginger martinis and pink sparkling wine.
Entertainment: Provided by Lucas Crutchfield.
We are all very competitive when it comes to our baking skills. We frequently bring in a new baking recipe for each other to try. We thought that making it a fun event and tying it to such a cause as breast cancer, particularly during Breast Cancer Awareness Month, would be an ideal way to have fun doing what we love for a cause we believe in. We hope that people will come and enjoy the evening with us. “It’s just a few days before the breast cancer walk on Saturday, so in a way it’s our own little pep rally,” says Lindsey Voorhees, a Fish House manager.
