We are right in the middle of a bustling holiday season at our house. What a wonderful time of year! It’s my favorite. We have had so many of you coming over to celebrate the season! Guests come in their holiday finest, bringing gifts, laughing, sipping champagne. Such a happy time! For our complete holiday hours, click here.

We are getting ready to celebrate the beginning of a new year with a four-course wine dinner on New Year’s Eve. We will have two seatings to accommodate those wishing to participate in this year’s Pensacola Pelican Drop Celebration on Palafox. We will also have a complimentary champagne toast and live music from  Jerry Dawson of The Shiz accompanied by band members of The Astronauts. Down on Palafox Street, our Great Southern Events team will be hosting New Year’s Eve in the courtyard on the corner of Palafox and Government streets. There will be a bar serving delicious raspberry margaritas, mixed drinks, beer and wine. Chef Irv Miller from our sister restaurant, Jackson’s Steakhouse, will be serving a Pensacola Cheese-Steak Sandwich with caramelized onions and hot pepper cheese sauce for $7.00. The courtyard will open at 5:00 p.m. for bar service with sandwich service beginning at 6:00 p.m. Be sure to stop by and say hi so we can wish you a happy 2012!

2012 will bring Great Southern Restaurant Week. The Fish House, Jackson’s Steakhouse and Atlas Oyster House will once again team up to present Winter Restaurant Week, January 24 – 28, 2012. In step with similar events in cities all around the country, Restaurant Week is a culinary celebration that offers residents and visitors alike world-class dining at a great value. Are you ready for some football … food?

It’s time to celebrate the Super Bowl with fellow fans. A super shindig requires at least one TV, comfy seats and, of course, good eats.

Melissa Martin, events coordinator for the Great Southern Restaurant Group, had plenty of tips to make your Super Bowl party a success.

For those hosting a Super Bowl gathering, she suggested first setting the stage with temporary team decor. ”You can’t get into the game mood while sitting on a pretty pink couch, so logo up your living room,” Martin said. “You can display team posters, flags or cushions. It’s a quick and easy way to decorate.”

Once the team colors are flying, you’ll need a game plan for feeding the masses, she said. Guests won’t be expecting a four-course meal, so keep it tasty, but simple. ”You want to serve easy, pick-up items such as nachos, (more…)

The “DO UNTO OTHERS” report

We are delighted to report that we had a wonderful time at the Manna Pantry Fill a Bowl for Manna event on January 15. If you haven’t been to one before, mark your calendars for next year. Here’s how it works: Show up at Manna Pantry on 116 E. Gonzalez Street around 1:00 p.m. and purchase a handcrafted bowl provided by Pensacola State College. Then you take the bowl to different stations set up by local area restaurants like ours and sample some really incredible soups! We made a delicious black bean chili with a cilantro cream, and had a great time visiting with our friends like you who stopped by to say hello to us. There was also a great silent auction and a trivia contest emceed by our good friend Buzz Ritchie. Proceeds from the sale of the bowls as well as silent auction items benefit Manna Pantry directly. We were able help feed over 30,000 people in Northwest Florida. We like to feed people, so it was truly a win-win!

We are also geared up to head over to the Pensacola Museum of Art in downtown Pensacola January 28 for Corks ’N’ Canvases 2011 from 6-9 p.m.

The evening will include:

Wine Tastings by Aragon Wine Market, The Wine Bar and Republic National
; heavy hors d’oeuvres from Jaco’s Bayfront Bar and Grille, Culinary Productions and Great Southern Restaurant Group/Fish House
; complimentary beer, soda and water provided by Lewis Bear Co.

We were so proud to attend the dedication of two new Habitat for Humanity homes that the restaurant sponsored in the greater Pensacola area. The homes are located on 1601 Gary Ave. and 1605 Gary Ave.

As a result of a long partnership with Habitat for Humanity, The Fish House received the National Restaurant Association’s prestigious Restaurant Neighbor Award for the state of Florida. This statewide award honors restaurants that go above and beyond in community service. The recognition is for its work with Pensacola Habitat for Humanity to build more homes and serve more families year after year. The Fish House employees, friends and family volunteer regularly, donating their time and talents in various ways. The restaurant has mobilized volunteers to serve more than 2,000 volunteer hours toward the construction of homes for low-income families. In addition, The Fish House shares its marketing talents and media exposure to spread awareness about Habitat. At home dedications, The Fish House team is always there, helping make the event special for the new homeowners and their families. The Gary Avenue homes were fitted with fire safety sprinklers through a partnership with Escambia County Fire Rescue and several sprinkler system contractors. The Grits Girl explores the Who, What and Huh? — of cooking this holiday season.

It’s that time of year again. The holiday season. Most folks get in a real panic over what to serve. The Grits Girl keeps it simple. I order to go.

Some people like to make holiday dinners fancy. I’ve seen these recipes with highfalutin’ names, usually in French or Latin. Personally, the Grits Girl doesn’t recommend trying something too complicated if family is coming over. Especially your momma. This has not worked out well for me in the past, and my mother loves to tell everyone about the peanut butter and green beans.

Do you ever wonder how a bartender can make that drink taste like a piece of Key lime pie (Key lime martini), or a piece of Lemonhead candy (lemon drop martini), or even like a piece of gingerbread (white-chocolate gingerbread martini)? Let me introduce you to the liqueur (not to be confused with liquor).

Originating from the Latin word liquifacere (to liquefy), liqueurs date back as early as the thirteenth century, and are descendants of herbal medicines.

Liqueurs are alcoholic beverages that have been flavored with a variety of ingredients, including fruit, herbs, nuts, spices and flowers. They are typically very sweet, often colored and generally low in alcohol content. While there are numerous flavored spirits (e.g., flavor-infused vodka), the main distinction is that liqueurs contain added sugar, while spirits do not.

Liqueurs come in a wide range of flavors, including almond, hazelnut, vanilla and chocolate, to name a few. While many express a primary flavor, all liqueurs are blends. For example, in order to emphasize the chocolate in crème de cacao, a small amount of vanilla is added into the mixture. Combining liqueurs with primary spirits and other mixers, you can manipulate a drink to taste like just about anything you can imagine.

One of my favorites to use is a Spanish liqueur called Licor 43. It derives its name from the secret combination of forty-three fruits, spices and herbs used to make it. It is a creamy blend with its dominant flavor being orange. However, it can be used in many drinks, contributing different flavors, depending on the other spirits being used. For example, it helps emphasize the creaminess and lime flavor in the Key lime martini.

One of my favorite drinks to make here at The Fish House is the Dreamsicle. If made correctly, it tastes just like the orange Push-Up Pops we used to eat as children.

To make this drink, combine the following in a martini shaker:

2 orange slices (muddle thoroughly)

1.25 ounces Three Olives Orange Vodka

.75 ounce Licor 43

1.5 ounces cream

Shake vigorously and strain into a martini glass. Garnish with an additional fresh orange slice.

Sit back and enjoy, and reminisce on the days of buying Push-Up Pops off the ice cream truck.
