More than 3.7 million visitors come to the Pensacola Bay Area each year according to the Pensacola Bay Area Chamber of Commerce. Known for its 52 miles of pristine beaches and family-friendly attractions, Pensacola also is home to many fine restaurants. Many of the more formal restaurants offer specialty steaks and fresh local seafood. Reservations are recommended though not required at most establishments.

We were so proud to attend the dedication of two new Habitat for Humanity homes that the restaurant sponsored in the greater Pensacola area. The homes are located on 1601 Gary Ave. and 1605 Gary Ave.
As a result of a long partnership with Habitat for Humanity, The Fish House received the National Restaurant Association’s prestigious Restaurant Neighbor Award for the state of Florida. This statewide award honors restaurants that go above and beyond in community service. The recognition is for its work with Pensacola Habitat for Humanity to build more homes and serve more families year after year. The Fish House employees, friends and family volunteer regularly, donating their time and talents in various ways. The restaurant has mobilized volunteers to serve more than 2,000 volunteer hours toward the construction of homes for low-income families. In addition, The Fish House shares its marketing talents and media exposure to spread awareness about Habitat. At home dedications, The Fish House team is always there, helping make the event special for the new homeowners and their families. The Gary Avenue homes were fitted with fire safety sprinklers through a partnership with Escambia County Fire Rescue and several sprinkler system contractors. (more…)

Last August, we had our first-ever Restaurant Week featuring exciting menus from our three restaurants. It was so well received, and we had so much fun putting on the event, that we decided to do it again!
The Fish House, Jackson’s Steakhouse and Atlas Oyster House presents Winter Restaurant Week, January 25 – 29, 2011. In step with similar events in cities all around the country, Restaurant Week is a culinary celebration that offers residents and visitors alike world-class dining at a great value.
Chefs from each restaurant will prepare a three-course, fixed-price dinner menu utilizing the best in local and seasonal ingredients, showcasing their culinary expertise, for $33.00 per person, per restaurant. Diners are encouraged to try each special menu at all three restaurants during Restaurant Week. Menus will be available at each restaurant Tuesday, January 25, through Saturday, January 29, beginning at 5:00 p.m.
“We created the GSRG Restaurant Week event to highlight Pensacola as a premier dining destination, providing an opportunity to enjoy a special menu from each of our restaurants,” said Collier Merrill, president of the Great Southern Restaurant Group (GSRG). “This will give everybody another occasion to enjoy a great evening in Downtown Pensacola.

Washington, D.C., November 17, 2010 — Florida House, the state’s embassy in Washington, D.C. joined forces with VISIT FLORIDA, the orange state’s tourism group representing the Florida Department of Agriculture and Consumer Services, Florida Department of Citrus and Florida Fish and Wildlife Conservation Commission to send forth one simple message — Florida seafood is safe.
And to get their point across renowned Florida Chefs Dean Max of 3030 Ocean, Fort Lauderdale, Jim Shirley of Great Southern Café, Seaside, Florida as well as Pensacola Joshua Butler, Executive Chef for the State of Florida, Governor’s Mansion and Justin Patrick Timineri, Executive Chef and Culinary Ambassador for Fresh From Florida were on hand cooking for the various politicos and other guests on hand.
Each chef created foods using fresh Florida seafood and their offerings were mighty good.
Capturing the title “King of American Seafood” from thirteen other teams at the New Orleans Great American Seafood Cookoff, Chef Max presented a delightful Sebastian Inlet Clams BBLT (Bacon, Basil, Lettuce and Tomato) with the clams presented over a piece of oil brushed ciabatta bread, the clams atop to be dressed in a red sauce of tomatoes, garlic, shallots and thick, double-smoked bacon that added texture and an earthy aroma to the dish.
The taste was incredible with the smart, fresh acidic tomato balanced against the robust double-smoked bacon.
“Tomatoes are in season now and they are good,” Chef Max said. “I source our bacon from Benton’s Family Farm. And the clams come from Sebastian Inlet. The bit of spice comes from the Calabrese peppers.”
The spice of the peppers is perfectly smoothed from the fat of the bacon and together it is a tasty dish would make a perfect, comfort food dish.
It wouldn’t be Florida seafood without Grouper and Chefs Butler and Timineri worked together to present a Dog Island Grouper Burgers, a mélange of grouper and shrimp tossed into a “cake” with red onion, bell pepper, celery, breadcrumbs, whole grain mustard and mayonnaise creating a juicy, flavor burger served alongside Chef’s Florida Slaw made with lime juice, Greek yogurt, grapefruit and tangerines tossed together with cabbage, carrots and onion.
Chef Shirley spooned out Grits à Ya Ya, a wonderful dish in which the grits are made with smoked gouda cheese and creamed corn, then garnished with “The Ya Ya,” a sauce of applewood-smoked bacon, shrimp, Portobello mushroom, fresh spinach and more, then garnished with smoky chili spiced, grilled shrimp.
Look who’s on the television!
Monday, November 15th, 2010 This month we had a great opportunity to be featured on Fox 10’s new morning show, “Studio10.” Starting hosts are Cherish Lombard and Joe Emer. The dynamic morning duo visited our restaurant and set up a makeshift television studio in our private dining room, The Bait Shop. The theme of the show was Thanksgiving sides. Chef Billy Ballou was first up and chose to prepare a recipe for dressing that is a favorite of his father’s. Billy told the television audience that his father is a huge fan of oysters, which causes him to have to prepare two pans of dressing each Thanksgiving, one with oysters and one without. Billy’s mother doesn’t care for oysters, so the wise father chooses to lose the dressing battle in order to win the oyster war. Enjoy Billy’s recipe for oyster and andouille sausage dressing.

Congratulations to Chef Jim Shirley of The Fish House and Atlas Oyster House, 600 Barracks St., on being chosen as part of a delegation to represent Florida seafood in our nation’s capital.
Shirley — one of the Pensacola Celebrity Chefs, and a contributor to the PNJ Food & Wine section’s “Chef’s Corner” and “Wine Time” columns — joins Chef Dean Max of Fort Lauderdale’s 3030 Ocean Restaurant and Chef Josh Butler, who works in the Florida Governor’s Mansion, to prepare seafood dishes for the Florida Seafood Celebration, set for Nov. 17 in Washington, D.C.
The event, presented by Visit Florida, the Florida House on Capitol Hill, the Florida Department of Agriculture, the Florida Fish and Wildlife Conservation Commission and the Florida Department of Citrus, is designed to remind travelers and consumers that “Florida is open for business and that Florida seafood is delicious.” It’s one of many events and promotions that hope to overcome negative perceptions in the wake of the BP oil spill.
The gala event will take place at Florida House in Washington, and will be attended by members of Florida’s congressional delegation, state leaders and other dignitaries.
And of course, Shirley will be preparing his signature Grits à Ya Ya. Washington may not be able to agree on much these days, but I’ll bet that everyone there will agree that this is one delicious dish.
