The acclaimed James Beard House has selected the Pensacola Celebrity Chefs to showcase Gulf Coast cuisine this summer in New York City.

On June 28, chefs Dan Dunn of H2O at the Hilton Pensacola Beach Gulf Front, Irv Miller of Jackson’s Steakhouse, Jim Shirley of the Fish House, Gus Silivos of Skopelos / Nancy’s Haute Affairs and Frank Taylor of Global Grill will prepare a regional tasting menu to an intimate foodie audience at the James Beard House.

“We all feel very privileged to be invited to cook at the James Beard House,” said Dunn. “The James Beard House hosts noteworthy chefs and winemakers throughout the year to help celebrate America’s culinary heritage. We are proud to be among this elite group while representing the Pensacola Bay Area.”

The James Beard Foundation was established in 1986 in honor of James Beard, a cookbook author, teacher and father of American gastronomy. Beard’s Greenwich Village townhouse is now the stage for America’s finest chefs. The foundation’s events and programs are designed to educate, inspire, entertain and foster a deeper understanding of American cuisine. (more…)

More than 3.7 million visitors come to the Pensacola Bay Area each year according to the Pensacola Bay Area Chamber of Commerce. Known for its 52 miles of pristine beaches and family-friendly attractions, Pensacola also is home to many fine restaurants. Many of the more formal restaurants offer specialty steaks and fresh local seafood. Reservations are recommended though not required at most establishments.

Three Restaurants, Three Menus, Three Courses, $33

Last August, we had our first-ever Restaurant Week featuring exciting menus from our three restaurants.  It was so well received, and we had so much fun putting on the event, that we decided to do it again!

The Fish House, Jackson’s Steakhouse and Atlas Oyster House presents Winter Restaurant Week, January 25 – 29, 2011. In step with similar events in cities all around the country, Restaurant Week is a culinary celebration that offers residents and visitors alike world-class dining at a great value.

Chefs from each restaurant will prepare a three-course, fixed-price dinner menu utilizing the best in local and seasonal ingredients, showcasing their culinary expertise, for $33.00 per person, per restaurant. Diners are encouraged to try each special menu at all three restaurants during Restaurant Week.  Menus will be available at each restaurant Tuesday, January 25, through Saturday, January 29, beginning at 5:00 p.m.

“We created the GSRG Restaurant Week event to highlight Pensacola as a premier dining destination, providing an opportunity to enjoy a special menu from each of our restaurants,” said Collier Merrill, president of the Great Southern Restaurant Group (GSRG). “This will give everybody another occasion to enjoy a great evening in Downtown Pensacola.

You’d never know it from Katy Mixon’s television and film roles: Talk with her off camera, though, and Katy is true Southern — starting with the accent that drips with words like honey and ma’am.”

The very professional Katy Mixon has become exactly what she always wanted to be — an actress. And now as a co-star in the popular CBS series, “Mike & Molly,” she’s a successful actress. The ensemble comedy that airs each Monday is from the creators of “Two and a Half Men” and “The Big Bang Theory.”

I guess you could say Katy Mixon is a vixen in the new show — she’s the sexy sister who tempts Molly with food, while the latter works to lose weight.

“I love this role. It’s so fun,’’ said Katy, who is the over-the-top Victoria Flynn in the series. “It’s a wonderful joy to play somebody so very wrong and flawed, but intriguing. But she does have a heart of gold for her sister. She means well, but she’s going to state her mind.”

The Pensacola native and one of the talented youth in the Pensacola Children’s Chorus knew at a very young age that she was destined for a career in the performing arts.

Graduated from the Pensacola School of the Liberal Arts, and during her senior year of high school, she was honored by the National Foundation of the Arts in Miami, which led to an audition for, and acceptance into, the drama program at Carnegie Mellon University. Katy graduated in 2003 from the Conservatory of Drama.

“They train you there,’’ Katy said. “I learned different dialects, and you have coaches. That’s why you don’t hear that Southern accent.”

VERSATILE ROLES AND RESPECTED CO-STARS
We often hear of the struggles of aspiring young actresses, while Katy’s talent and timing have worked in her favor.

Her role as a middle school teacher in HBO’s “Eastbound & Down” has earned her rave reviews.

Jackson’s Steakhouse and the Pensacola Opera

Jackson’s Steakhouse is teaming up with the Pensacola Opera to present “Dinner and an Aria”. It gives young opera professionals, performing experience and gives the general public a chance to see an opera performance.

The next performance will be Thursday, October 21, at Jackson’s Steakhouse.

The featured performers, Hanan & Howard will be accompanied on piano by Blake Riley and will present favorites from the world of opera, classic Broadway, folk and contemporary music.

Pensacola native Hanan Tarabay and her husband, Howard Reddy, are both dynamic vocalists who have achieved outstanding success performing throughout Europe and North America. Past performance venues include the Palm Beach Opera, Florida; Grange Park Opera, United Kingdom; Teatro Regio, Turin, Italy; Spoleto Festival, Italy; and the Netherlands Opera Studio in Amsterdam. Hanan & Howard have also performed in concert and oratorio at the Kennedy Center, Washington, D.C.; Carnegie Hall, New York City; York Minster Cathedral, United Kingdom; and the National Concert Hall, Dublin, Ireland.

Choosing a venue for a wedding can be exhausting for the average person; however, lucky for me, in my profession as an event planner, I have already seen what Pensacola has to offer. We are fortunate to live in a town that is rich in history and culture. My fiancé, Josh, and I really wanted our families, who are from out of town, to see our beautiful city and why we love it here so much! This place has more charm than Prince Charming himself.

A little meat on the bones is good for the soul: Barbecue for the weekends.

Here in the South we do a lot of grilling on weekends. At almost all football pregame cookouts, backyard get-togethers, and pool parties, the preferred cooking method is the grill!

There’s nothing quite like the smell of smoking hardwood mixed with the natural juices of the meat and the marinade. It demands the attention of your guests and nearly every neighbor within 200 yards. So, down South, be prepared to cook up a bunch of barbecue. Remember; nothing’s worse than cooking just enough for the party and unexpected guests, leaving yourself without any leftovers to enjoy over the next couple of days!

Here at the Fish House and Atlas, our chefs are grill experts. For this blog entry, we asked them to lend a little bit of their expertise to you and yours to enjoy.

This is a favorite recipe our chefs created for our “Sweet Tea, Southern Cooking” series. It features plump, juicy chicken thighs – but really, any meat can be used. The first part of the recipe features a Southern version of water and Coca-Cola, the marinade’s main ingredient. What goes better with barbecue then ice-cold Coca-Cola?

Well, ice-cold beer, probably. But just so you don’t have to make the hard choice of what to drink, we threw the Coke into the marinade so you can say you had both! To really jazz things up, we have paired the Coke-marinated chicken with a Jack Daniel’s barbecue sauce to slap on it. We think you will agree that the aromas of the white-oak barrels that Jack Daniel’s uses in its maturation process really bring out fantastic flavors for the barbecue sauce. So try it and let us know if we are right-on. It’s OK if you tweak the recipes a bit; we want to know about that, too. Either way, eat a bunch and have fun.

Hope the right team wins for you, the pool stays clean and cold, and the relatives live close enough not to have to sleep over when the party’s done.
