November 2011

Fall is off to a wonderful start. The weather has been crisp and cool. Chef Billy Ballou has updated our menu to add a few seasonal touches. For lunch, we now have a delicious Bay City Beef Sandwich — homemade roast beef served on a toasted pretzel bun with horseradish white cheddar, Dijon mayonnaise, and a side of au jus. For dinner, we have a Mediterranean-spice-seared yellowfin tuna over a vegetable couscous resting in a pool of spiced tomato sauce and finished with fried basil. To see all of menus, visit our website by clicking here.

Pensacola is such a beautiful place in the fall, and we have had a lot of beautiful weddings so far. Most notably, our own event planner, Melissa Martin (now Melissa Bailey), tied the knot with Josh Bailey. The ceremony was at Old Christ Church and the reception under the oaks at the Barkley House — so next time you see Melissa, offer congratulations to the new Mrs. Bailey!

We celebrated the Blue Angels Homecoming Air Show and the 100-year anniversary of Naval Aviation! We had lots of VIPs in town for this, a Blue Angel Reunion, and a big party hosted by Beré Jewelers and Breitling Watchmakers.

We stared into the face of fear for the Gulf Coast Council of Boy Scouts of America by sponsoring and participating in “Scouts Over the Edge.” This event allowed one of our owners, Collier Merrill, and me to rappel down the Pensacola Beach Hilton, which is one of the tallest buildings in Northwest Florida. Pictures of the event, which can be seen here, is held annually — so if thrill seeking is a hobby of yours, be sure to check it out next year. It was an adventure I won’t ever forget!

We are excited that next month we will host John Weisman, a New York Times best-selling author, as he reveals his latest book, KBL: Kill Bin Laden. This book is based on true facts and gets as close to the truth about the hunt to find and kill Bin Laden as we are apt to get. Mr. Weisman collected information from military and government experts. He carefully researched and re-created the timeline of the operation with this information. His fictional book is a thrilling account of one of the most top-secret military operations in our history. This event will be held on December 8, 2011, 6:00 p.m., on our Deck Bar. Free to the public. Books will be available for purchase for the author to sign, courtesy of Barnes & Noble Booksellers. For more information, call Shelley Yates at 748-9001.

As the holidays draw near, don’t forget to reward your employees’ hard work by booking a celebration at our house. We can also schedule something special for you at our sister restaurant, Jackson’s Steakhouse. Call Melissa and Bianca to schedule your event now. Don’t wait until the last minute; spaces fill up quickly. 850.433.9450

May you and your family have a wonderful Thanksgiving.

Until next time, remember — you are always welcome at our house!

I officially am a married gal.

I will now get back to writing about football parties and new ideas for celebrating the holiday season, but before I do, I thought I would take the opportunity to write about planning my wedding reception to finish out this wedding series.

Because I’m in the event-planning business, it was easy to choose the right vendors for our wedding.

Hiring a wedding planner was a necessity, and Megan Kennedy of Megan K. Events was at the top of the list. With her fresh eye and knack for detail, it was a no-brainer to have her on board. Not only can you hire her event company for the planning portion; she also specializes in floral decor and design. But even though Kennedy and company do impeccable work, Shannon Pallin from Fiora always will have a special place in my heart. Though Fiora was the chosen florist for the reception, I had Kennedy’s team transform my rehearsal dinner venue, 5 Eleven Palafox, into a page right out of a bridal magazine.

After meeting and working with Pallin years ago, I knew she would do the floral design for my wedding. Her long-term experience and knowledge in her field make her one of the best floral designers in the country. After 10 years in California, Pallin moved to New York City and worked as a designer and stylist for Martha Stewart, Preston Bailey and Katie Brown. Her 22 years of experience shine in your consultation as she verbally paints a picture of your event.

For the wedding venue, she decided to capture the natural beauty of the Barkley House by enhancing its beauty with cafe lights and rich, bold colors. The centerpieces alternated between fresh flowers and antique birdcages as well as black urns with manzanita branches, complementing florals and mixtures of foliage and vines on the bases.

As many of you can guess, my choice to cater my wedding rehearsal and reception was The Fish House. Not so much because I have been with the company for more than 10 years, but because I have been lucky enough to see the amazing culinary skills of the chefs, who create the best of Southern cuisine.

Because it was hard to choose what we wanted our guests to experience, Josh and I decided on several action stations and food displays as well as passed hors d’oeuvres.

To start, we served mini Southern crab cakes and barbecue beef satay. The guests also were treated to an antipasto station during cocktail hour. When the stations opened, the guests were able to try homemade Asian stir-fry as well as Grits à Ya Ya served in a martini glass. We also took advantage of the fall vegetables available at the local farmers markets to create a large fall-inspired salad bar.

Chef Billy Ballou and team put together eye-catching displays of fresh-caught seared tuna and coastal shellfish — fresh-cracked oysters, clams and snow crab.

Last but not least, I have to talk about the sweetest woman in town: cake baker Betty Weber, a lady so good at what she does, you have to book her months in advance.

Well, friends, I hope you have enjoyed the journey we have taken over the past few months, and while you read this, I imagine I will be lying under the Jamaican sun, sipping an umbrella cocktail, enjoying my honeymoon.

Until next time, friends, no worries.

This is the first time since I have been engaged that the wedding details are causing insomnia. I want to take the time this week to talk about tonight’s — I mean, this morning’s — reason for sleeplessness.

The wedding rehearsal dinner is an opportunity for the bride’s and groom’s parents to meet and have a good time. This sounds simple enough, but if you have a large wedding party and a lot of people coming from out of town, it might be hard to find a venue that fits your budget and the number of guests attending.

We have more than 65 guests attending our rehearsal dinner, and they are coming from all over. Even though the rehearsal dinner is traditionally planned by the groom, since I am an event planner and a bit of a control freak, I agreed to knock it out myself. Even though I do this for a living, there are a lot of details involved, especially if you are renting a venue and hiring an outside caterer. Hopefully this week I can leave you with a few tips that will make planning your own rehearsal dinner much more stress free.

Downtown Pensacola has many beautiful restaurants and venues perfect for hosting a rehearsal dinner. No matter where you book, these tips that I’m offering hold true. My fiancé and I have kept all our venues for our wedding weekend local to downtown because of its romantic charm. Due to the number of guests attending, we have rented a large venue on Palafox Street and we’re having the dinner catered by the same local restaurant that is catering our reception. (more…)

Hordes chase the ring: Hundreds race for diamond

Like something from a J.R.R. Tolkien novel, the glittering ring beckoned them all.

But only one person would win — and wear — the $10,000 sparkler in Elebash’s Diamond Dash.

On Saturday, the streets of downtown Pensacola swarmed with treasure hunters. Studying clues in text messages, about 500 people walked, jogged and flat-out ran from location to location, hoping to solve challenges and earn points in the two-hour competition.

“Come on, phone,” Tyrone Wicks, 50, muttered as he anxiously checked his messages. “We need to go!”

Within seconds, he and fiancee Bridgette Price, 45, were hustling down Palafox Street to determine the color of the flowers surrounding a plaque at St. Michael’s Catholic Church. Other teams searched the T.T. Wentworth Jr. Florida State Museum for an alligator skull and calculated menu prices at The Fish House.

The hunt, which served as both a downtown Pensacola showcase and fundraiser for teen volunteer group Chain Reaction, began at 10 a.m. at Seville Quarter. There, Smith Anderson with Boston-based SCVNGR, explained the race rules to the 250 two-member teams.

“One cellphone per team and no cheating,” he warned the eager crowd. “And no cars, either. This is a human-powered competition.”

During the Diamond Dash, SCVNGR employees sent text messages about 50 downtown locations and area-specific challenges to each team. Points were earned by texting the correct answers back to SCVNGR.

Bridal veils billowing behind them, Team Diamond Digger, consisting of Mary Wright and Ginny Jeudevine, got stumped by a pair of painted pelicans.

“I don’t understand this one at all,” Wright complained, studying the military-themed birds on Palafox Street. “Part of our clue must be missing.”

A variety of prizes were awarded to the top 10 teams at a post-race party at The Fish House. But all eyes were on the top prize: a Simon G diamond ring donated by Elebash Jewelry Co.

Each team had plans for the ring, which many competitors had tried on earlier at the Palafox Place jewelry store.Wicks hoped to give it to his fiancee, “because a happy bride guarantees a happy groom.”

MaryBeth Chambers and Tammy Duncan, 40-year-old friends from Molino, planned to have the ring divided into two rings if they won.

Joanne-Claire Vickers, however, had no intention of sharing her potential prize with best friend and teammate Christine Mikitaw.

“The ring is mine,” Vickers, 35, stated coolly as Mikitaw laughed. “She knows I deserve it more.”

But, in the end, a married couple claimed the grand prize. With 90 points, Frank and Stephanie White of Pensacola won the ring, which Frank White presented to his wife on bended knee.

“It’s definitely an upgrade,” Stephanie White said, grinning. “I can’t believe we won.”

Elebash’s Diamond Dash raised $1,200 for Chain Reaction.

And if you didn’t win this race, there may be another down the road.

“It’s a great event that shows people what downtown Pensacola has to offer,” Pensacola Mayor Ashton Hayward said, congratulating the winners. “I would love to see it back next year.”

PERFECT PARTIES: Engagement parties should be stress-free

March 31st marked the one year since the day I was lying on a sandy beach in Puerto Rico and my future husband proposed to me. I will never forget that day, and as of now, it has been the best moment of my life. I say “as of now” because on October 15, I will say “I do” to the greatest man I know!

As I reflected about these wonderful moments, I started thinking about the many celebrations that occur before the big “I do.” My favorite so far would have to be the engagement party we threw when we returned home.

My fiancé and I took care of all the costs and planning for our party, and like most young engaged couples, we were on a tight budget. We saved money by doing almost everything ourselves — from the venue to the food to how we planned for the big event.

Say “I do” to brunch when planning your wedding.

Brunch by the bay every Sunday at The Fish House and The Atlas Oyster House form 11-2It’s brunch season and it’s about to be wedding season. Post-wedding brunches are the new “must-have” for most Southern brides, and in particular, Pensacola brides. Those of us who are lucky enough to live here know Pensacola is a paradise on the Gulf of Mexico. Living in such a beautiful place, it’s not uncommon for relatives to crawl out of the woodwork for a visit or eagerly accept an invitation to a wedding. Our emerald waters and white sands are a big lure, in addition to any other festivity, making a houseful of guests a guarantee even after the big day is over.

There is a simple, and fun, way to mark the end of the celebration and send guests off with a smile. Hold a post-wedding brunch. (link to menu) At the Fish House and Atlas, we can create a custom event (link to special events) to complement your wedding theme, colors or other special accents to personalize your event.

A post-wedding brunch is a great time to recap the festivities and indulge in delicious dishes like Pecan-Fried Green Tomato Benedict (poached eggs and crispy pecan-crusted fried green tomatoes smothered in hollandaise) and Emerald Coast Benedict (hollandaise, poached eggs, and lump blue crab cakes over fried green tomatoes drizzled with white rémoulade sauce).

How one future groom pulled it off

The fact is, on Valentine’s Day the burden of proof falls on the man. A woman desires her guy to wine, dine and romance her and create a magical moment in the process.
Especially if a marriage proposal is involved.

Tyrone Wicks knows all about planning such an important moment, down to the last romantic detail. Last September, the Pensacola field marketer pulled off the surprise of all surprises when over dinner he proposed to Bridgette Price, whom he had been dating for three years.

Wicks’ elaborate plan went off without a hitch as he wined, dined and proposed to Price at their favorite restaurant while six of their closest friends looked on. The height of the evening came near the end of a meal. Wicks stood up and announced that he had orchestrated the evening’s events just for her. (more…)
