With the holiday season upon us, I thought it only fitting to write about a cocktail that goes with the season. Everyone has a favorite food or drink that they associate with different holidays or times of the year. Of course most of us relate hearty turkey, poultry or duck meals with Thanksgiving and Christmas, but there are other dishes, although not main courses, that are nonetheless just as relevant to these holidays. Foods such as cranberry sauce, stuffing, gravy-covered mashed potatoes — and for me, warm apple pie.

We are right in the middle of a bustling holiday season at our house. What a wonderful time of year! It’s my favorite. We have had so many of you coming over to celebrate the season! Guests come in their holiday finest, bringing gifts, laughing, sipping champagne. Such a happy time! For our complete holiday hours, click here.

We are getting ready to celebrate the beginning of a new year with a four-course wine dinner on New Year’s Eve. We will have two seatings to accommodate those wishing to participate in this year’s Pensacola Pelican Drop Celebration on Palafox. We will also have a complimentary champagne toast and live music from  Jerry Dawson of The Shiz accompanied by band members of The Astronauts. Down on Palafox Street, our Great Southern Events team will be hosting New Year’s Eve in the courtyard on the corner of Palafox and Government streets. There will be a bar serving delicious raspberry margaritas, mixed drinks, beer and wine. Chef Irv Miller from our sister restaurant, Jackson’s Steakhouse, will be serving a Pensacola Cheese-Steak Sandwich with caramelized onions and hot pepper cheese sauce for $7.00. The courtyard will open at 5:00 p.m. for bar service with sandwich service beginning at 6:00 p.m. Be sure to stop by and say hi so we can wish you a happy 2012!

2012 will bring Great Southern Restaurant Week. The Fish House, Jackson’s Steakhouse and Atlas Oyster House will once again team up to present Winter Restaurant Week, January 24 – 28, 2012. In step with similar events in cities all around the country, Restaurant Week is a culinary celebration that offers residents and visitors alike world-class dining at a great value. Happy Fall, Friends!

Fall is off to a wonderful start. The weather has been crisp and cool. Chef Billy Ballou has updated our menu to add a few seasonal touches. For lunch, we now have a delicious Bay City Beef Sandwich — homemade roast beef served on a toasted pretzel bun with horseradish white cheddar, Dijon mayonnaise, and a side of au jus. For dinner, we have a Mediterranean-spice-seared yellowfin tuna over a vegetable couscous resting in a pool of spiced tomato sauce and finished with fried basil. Pensacola is such a beautiful place in the fall, and we have had a lot of beautiful weddings so far. Most notably, our own event planner, Melissa Martin (now Melissa Bailey), tied the knot with Josh Bailey. The ceremony was at Old Christ Church and the reception under the oaks at the Barkley House — so next time you see Melissa, offer congratulations to the new Mrs. Bailey!

We celebrated the Blue Angels Homecoming Air Show and the 100-year anniversary of Naval Aviation! We had lots of VIPs in town for this, a Blue Angel Reunion, and a big party hosted by Beré Jewelers and Breitling Watchmakers.

We stared into the face of fear for the Gulf Coast Council of Boy Scouts of America by sponsoring and participating in “Scouts Over the Edge.” This event allowed one of our owners, Collier Merrill, and me to rappel down the Pensacola Beach Hilton, which is one of the tallest buildings in Northwest Florida. Pictures of the event, which can be seen here, is held annually — so if thrill seeking is a hobby of yours, be sure to check it out next year. It was an adventure I won’t ever forget!

We are excited that next month we will host John Weisman, a New York Times best-selling author, as he reveals his latest book, KBL: Kill Bin Laden. This book is based on true facts and gets as close to the truth about the hunt to find and kill Bin Laden as we are apt to get. Mr. Weisman collected information from military and government experts. He carefully researched and re-created the timeline of the operation with this information. His fictional book is a thrilling account of one of the most top-secret military operations in our history. This event will be held on December 8, 2011, 6:00 p.m., on our Deck Bar. Free to the public. Books will be available for purchase for the author to sign, courtesy of Barnes & Noble Booksellers. At our house, we are excited to welcome fall and the beginning of the holiday season. October is also the month for breast cancer awareness. At our house, and across the globe, cancer sadly affects us all. Our employees decided this year to do a little something to raise awareness for breast cancer. We are all very proud of them and hope that you will take a minute to read below about their fund-raising idea.

October also celebrates Halloween. We are kicking off the Halloween weekend with our famous Girls’ Night Out — Halloween style. Girls’ Night Out is the place to party every Wednesday night with live music and $2.00 you-call-it drinks for all girls 21 years and older. This year we are having our first Ghouls Night Out Costume Contest offering a $1000.00 cash prize for first place and a $500.00 prize for crowd favorite (details below). For the actual Halloween Weekend, we are offering seasonal specials at The Fish House and Atlas. We welcome all costumed patrons at our house — but please feel free to come as you are! Remember that we also serve a late-night menu into the wee hours in case you get hungry after all of your partying.

We had some out-of-town company drop by our house since we last visited:

We were thrilled to have Mr. Hal Holbrook come to dinner at our house last weekend. Mr. Holbrook was in town starring in his one-man show depicting Mr. Mark Twain. Our server, Pranee Adams, took care of Mr. Holbrook and his assistant during his visit. He commented that his dinner was amazing!

Mark W. Davis peddled over for lunch. Mr. Davis is cycling across the country in order to raise money for his granddaughter. The former Army command sergeant major’s 3-year-old granddaughter was diagnosed with acute lymphoblastic leukemia shortly after her first birthday. Inspired by his granddaughter’s courage, Davis decided he had to do more than just donate money to an organization. An avid bike rider for more than 30 years, the retired soldier created the Ride for Lilly.

Our favorite hometown television superstar, Joe Scarborough, and co-host Mika Brzezinski of the popular MSNBC’s Morning Joe show broadcast live right from our deck! It is always a great treat to have him come home. He has always done his best to promote our hometown whenever possible. He interviewed our mayor, Ashton Hayward, and our owner, Collier Merrill, about Pensacola. They had a lot of nice things to say about our city, and we were all thankful for the exposure.

We also had our governor swing by for some grits. Gov. Scott was passing through Pensacola coming back from Gulf Power’s Annual Economic Symposium. He announced that Escambia and Santa Rosa Counties would receive state grant funds. That’s good news!

The Grits Girl recently sat down with Ms. Bentina Terry, Gulf Power vice president, who talks about Pensacola being the most beautiful place that she has ever lived, her love of the law, her passion for economic development, what is on her iPod and why she really loves grits.

GG:  Thanks for talking with us, Bentina! You are an attorney who for works for Gulf Power Company, Vice President of External Affairs and Corporate Services. How did you go from law school to working for a utility company?

BT:  I went to law school with a goal to help people. I thought I would be a labor lawyer or a civil-rights attorney. I looked up to great lawyers like Thurgood Marshall and wanted to be a crusader for employees who were having problems at work, since people spend a majority of their time working. I realized that if I went to work for a big corporation, I could help teach companies the law and help them understand how to treat their employees. Working for a large company, I knew my contribution would have a greater impact.

I started off working for a large law firm that just happened to have Georgia Power and Southern Company as clients. I had other clients, but I started to learn about the utility business from there. I just found it to be very interesting. A lot of people think I just work for a utility company, but I think what we do is fascinating and so vital and important to the community. It is my passion. I love what I do, and I love the company I work for.

GG:  So through the Southern Company you got to Pensacola. Now that you are here, what do you think about this place?

BT:  It is really the most beautiful place I have ever lived. When I was thinking about moving to Pensacola, I listened to details about the city. When I heard that Pensacola had a symphony, an opera, a ballet, a children’s chorus, a little theatre and a university — from an arts and culture perspective, I thought, wow, this is not a small town! I was excited, and I said to myself, okay! This is the type of place I’d really like to live. (more…)

Meet Jared Ashley:

Amazing fans with unparalleled energy and a honky-tonk sound, Jared Ashley began his career by packing Nashville’s World Famous Tootsie’s Orchid Lounge for more than three years with the Dirty South Band. A long list of well-known recording artists have frequently jammed with Ashley on stage, including Merle Haggard, ZZ Top, Blues Traveler, Toby Keith, Joe Nichols and Tracy Lawrence.

Born in Hobbs, New Mexico on May 16, 1976, Jared relocated at age three to Newnan, Georgia, where he spent most of his childhood. At barely five years old, Jared received his first guitar for Christmas. The gift, which sported a picture of Mickey Mouse, became his favorite toy. When Jared was in the 10th grade, his family returned to Hobbs and Jared found himself spending more and more time playing guitar and writing music.

After graduating high school, Jared joined the US Navy, where he served for four years in Yokosuka, Japan. Following his dream to play music, the charismatic sailor played weekend gigs at George’s Country Bar in Tokyo, fronting the house band. While in the Navy, Jared also played two Persian Gulf DOD tours for over 20,000 military personnel and toured in more than 10 countries around the world.

After completing his Navy career, Jared made the big move to Music City. Once in Nashville, Jared picked up the house gig at the World Famous Tootsie’s Orchid Lounge. Jared and the Dirty South Band have been called the top band on the SEC college circuit, playing at universities all over the South. Jared also caught the eye of a Hollywood casting director who flew him to Los Angeles, where producers of the popular ABC network series “The Bachelor” considered Jared as a finalist for its Fall 2005 season.

Jared continues to win critical praise for his brand of high-energy country rock, and his fan base continues to grow. As a finalist in the fourth season of USA Network’s Nashville Star, Jared is looking forward to bringing his music to millions of country music fans and having the opportunity to showcase his ability to entertain.

James Wesley puts those core values into his music with a whiskey-smooth voice and a timelessly winning way with a great country song. Wesley sings directly to real people about real things that profoundly affect real lives—and from his small-town upbringing to his blue-collar work ethic, he has a deep understanding of what those folks are longing to hear.

“I know there’s more people out there than just me who want to hear something that grabs you and makes you go, ‘Wow, that’s me—that’s how I feel, that’s my day, that’s my family,’” he says. “When you swing a hammer every day, when you’re out there doing what you have to do, you learn a lot of compassion for the people that do it day in and day out.”

Wesley grew up in tiny Mound Valley, a community of about 200 people in Southeastern Kansas. He first discovered country music via his grandmother’s record collection, which included heaping helpings of classic crooners like Marty Robbins, George Jones and Ray Price. “We’d go over there on the weekends,” he recalls. “She’d have the console set up and the records stacked up and we’d listen to them as they dropped. Those guys back then, they could sing. I thought, ‘That’s what I want to do.’” (more…)
