Since we last reported, we are delighted to let you know that we have been a part of some pretty fantastic events around our community! Most notably, we would like to congratulate our star sushi runner, Thang Nguyen, for his awesome participation in the area 1 games for Special Olympics. Thang placed second in the 800 meter and third in the 400 meter! He did an awesome job. Way to go, Thang!

We also had a blast participating in the Elebash’s Diamond Dash and hosting the after-party on our Deck. The scavenger hunt drew hundreds of people who raced from one side of downtown to the other, hoping to win a stunning $10,000 diamond ring. A married couple claimed the grand prize. With 90 points, Frank and Stephanie White of Pensacola won the ring, which Frank presented to his wife on bended knee. The event was a lot of fun and raised $1,200.00 for Chain Reaction!

Children’s Home Society held “A Sunday of Soundside Splendor.” This event offered guests the opportunity to enjoy the beautiful sights of the Sound on Portofino’s private outdoor balcony. Throughout the afternoon, guests filled their glasses with fine wines and sampled delectable dishes selected by our Chef Jim Shirley, who is also a board member of the society. All proceeds stay right in our community to benefit the vulnerable children served by Children’s Home Society of Florida.

Looking forward this month, we are honored to participate again in Taste of the South in our nation’s capital. Taste of the South is privileged to have an Honorary Congressional Host Committee consisting of members of Congress from 13 Southern states: Alabama, Arkansas, Florida, Georgia, Kentucky, Louisiana, Mississippi, Missouri, North Carolina, South Carolina, Tennessee, Texas, and Virginia. Each state sponsors a table featuring regional specialties. We represent Florida and are sending our world-famous Grits à Ya Ya! The event raised money for Children’s Safety Center (CSC), located in Springdale, Arkansas. Children’s Safety Center is a private, nonprofit organization that serves as an advocacy center for abused children in Northwest Arkansas. In a child-friendly, family-centered facility, the Children’s Safety Center offers a one-stop setting to coordinate the investigation, prosecution and treatment services for these alleged child victims of sexual and physical abuse.

Join us also on April 21st for Business After Hours on our Deck Bar. Held the third Thursday of each month from 5 to 7 p.m., area businesses are able to showcase their establishments to the business community while guests make valuable contacts. Admission is free with one business card. Make this gathering a perfect time to build new business relationships and strengthen established ones. No reservations are required. Lots of great giveaways, including a sailing adventure for up to six people by our good friends at Condor Sailing Adventures!

Other events and charities we are proud to support this month: Chocolate Festival for Gulf Coast Kid’s House, Preemie Cup Regatta for Sacred Heart Hospital, Sertoma’s Hogfest, Pensacola Young Professionals, and many more.

Sunday night, about 100 foodies packed the Global Grill, 27 Palafox Place, for a special dinner by the Pensacola Celebrity Chefs.

The five chefs — Frank Taylor of the Global Grill, Irv Miller of Jackson’s Steakhouse, Dan Dunn of H2O, Jim Shirley of The Fish House and Gus Silivos of Nancy’s Haute Affairs — presented the dinner as a dress rehearsal for their June 28 dinner at New York City’s prestigious James Beard House. Dedicated to celebrating America’s diverse culinary heritage and future, the Beard House is considered the stage for America’s finest chefs.

The honor comes at a price: The chefs must cover all of the expenses, including travel and all the food that will be served, including shipping costs for local ingredients.

“You have to check the Grits a Ya Ya,” Shirley joked.

The five chefs felt the trip was worthwhile to promote Pensacola tourism and cuisine. Proceeds from Sunday’s dinner will help defray the expenses. (more…)

The “Let’s Grow” project, initiated by the Leadership Pensacola class (LeaP) of 2011, is a program that provides children an opportunity to cultivate healthy foods through school gardens and gain real world knowledge about nutrition to achieve greater health and wellness.

The “Let’s Grow” project, initiated by the Leadership Pensacola class (LeaP) of 2011, is a program that provides children an opportunity to cultivate healthy foods through school gardens and gain real world knowledge about nutrition to achieve greater health and wellness.

We had a wonderful opportunity to host a launch party last month for the “Let’s Grow” project. The event was held on our deck. Lucas Crutchfield provided live music. A silent auction was held with many donations from local businesses. Some highlights of the auction were a Pandora bracelet, multiple gift baskets, tickets to area events and art pieces. The Fish House provided appetizers. The group so far has raised over $30,000 in funds to support its project. These funds have gone to create gardens in five area schools. The group’s goal is to have all of gardens built by the end of March 2011.

Tequila, the precursor of many great times and consequent hangovers, has seen a resurgence. This is largely because of modern distillation processes, carefully managed aging techniques and inspection and exportation regulations that have been introduced by the Mexican government in order to ensure quality tequila and prevent counterfeiting of this blue agave product.

Like Champagne, tequila can only be made in certain parts of the world to receive the “tequila” classification. This area is relegated to Jalisco, a Mexican state that borders the Pacific Ocean, and certain areas of four other states. Roasting the hearts of slow-maturing blue agave, then pressing out the sugary liquid for distillation, is a centuries-old process that travels back to early Aztec civilizations. In fact, tequila is recognized as North America’s first distilled spirit.

There are several different styles and profiles of tequila; however, for this recipe, we use only Milagro Select Barrel Reserve Silver. This silver tequila is triple distilled and finished in French white-oak barrels. This mellows the tequila to an amiable presence perfect for sipping or mixing.

When you mix tequila, you must be careful to not lose the identity of the drink by overpowering it with other flavors. Rather than mask the tequila flavor, we are going to accent it by adding Licor 43, a bright-yellow Spanish liqueur. Licor 43 is made from citrus and a variety of other fruit juices and infused with vanilla. The number of ingredients totals 43, hence the name. We are going to use pineapple juice as an additional flavor that will help blend the two aforementioned products. One of my favorite “secret ingredients” for a special cocktail is egg white. Egg whites add a third dimension to a drink: texture. Generally speaking, this key ingredient to several classic cocktails is usually lost with modern adaptations.

The Flaming Heart 11„2 Ounces Milagro Select Barrel Reserve Silver Tequila 1„4 Ounce Licor 43 1 Ounce Pineapple Juice 1„2 Ounce Pasteurized Egg Whites 3 Dashes Tabasco Green Pepper Sauce

Mix the first four ingredients in a shaker tin. Shake well with ice for 10 seconds. This will allow the mixture to blend without being bruised by the ice.

Add ice to a short rocks glass and empty the shaker over the contents. You’ll have a delicious-looking, tasty cocktail.

To add a little kick to your creation, top it off with three splashes of Tabasco Green Pepper Sauce. Hope you enjoy. Stay thirsty!

The fact is, on Valentine’s Day the burden of proof falls on the man. A woman desires her guy to wine, dine and romance her and create a magical moment in the process.
Especially if a marriage proposal is involved.

Tyrone Wicks knows all about planning such an important moment, down to the last romantic detail. Last September, the Pensacola field marketer pulled off the surprise of all surprises when over dinner he proposed to Bridgette Price, whom he had been dating for three years.

Wicks’ elaborate plan went off without a hitch as he wined, dined and proposed to Price at their favorite restaurant while six of their closest friends looked on. The height of the evening came near the end of a meal. Wicks stood up and announced that he had orchestrated the evening’s events just for her. (more…)

The acclaimed James Beard House has selected the Pensacola Celebrity Chefs to showcase Gulf Coast cuisine this summer in New York City.

On June 28, chefs Dan Dunn of H2O at the Hilton Pensacola Beach Gulf Front, Irv Miller of Jackson’s Steakhouse, Jim Shirley of the Fish House, Gus Silivos of Skopelos / Nancy’s Haute Affairs and Frank Taylor of Global Grill will prepare a regional tasting menu to an intimate foodie audience at the James Beard House.

“We all feel very privileged to be invited to cook at the James Beard House,” said Dunn. “The James Beard House hosts noteworthy chefs and winemakers throughout the year to help celebrate America’s culinary heritage. We are proud to be among this elite group while representing the Pensacola Bay Area.”

The James Beard Foundation was established in 1986 in honor of James Beard, a cookbook author, teacher and father of American gastronomy. Beard’s Greenwich Village townhouse is now the stage for America’s finest chefs. We are delighted to report that we had a wonderful time at the Manna Pantry Fill a Bowl for Manna event on January 15. If you haven’t been to one before, mark your calendars for next year. Here’s how it works: Show up at Manna Pantry on 116 E. Gonzalez Street around 1:00 p.m. and purchase a handcrafted bowl provided by Pensacola State College. Then you take the bowl to different stations set up by local area restaurants like ours and sample some really incredible soups! We made a delicious black bean chili with a cilantro cream, and had a great time visiting with our friends like you who stopped by to say hello to us. There was also a great silent auction and a trivia contest emceed by our good friend Buzz Ritchie. Proceeds from the sale of the bowls as well as silent auction items benefit Manna Pantry directly. We were able help feed over 30,000 people in Northwest Florida. We like to feed people, so it was truly a win-win!

We are also geared up to head over to the Pensacola Museum of Art in downtown Pensacola January 28 for Corks ’N’ Canvases 2011 from 6-9 p.m.
