I must say Christmas is my favorite holiday, from the decorations to the smell of a fresh-cut Christmas tree being decorated by the family. To me, the house just feels warmer and more welcoming with the scent of baked cookies and the glow from the fireplace as it crackles during dinner.

The best part about this holiday is that you can celebrate all month long. Between office holiday gatherings and gift exchanges with friends over wine and old black-and-white Christmas movies, there are several ways to celebrate the season. This week I would like to offer you a few ideas on how to celebrate with friends and co-workers throughout the month.

As you may know, I am in charge of holiday celebrations at the Fish House and Jackson’s Steakhouse. With the variety of rooms we provide and the types of events that I have planned and executed over the years, I’m inspired to share some of my best ideas with you. Whether you work in an office of 10 or 100, there are lots of different ideas to make your co-workers feel special. (more…)

Ring in the New Year at our house!

On December 31, beginning at 6:00 p.m., the Fish House will offer a special dinner in celebration of New Year’s Eve. This special menu, created by Chef Billy Ballou, features four delicious courses paired with wines selected by Beverage Director William Morse and Premier Beverage Company.

Some highlights of the menu are an appetizer selection of a Butternut Squash Tart with roasted butternut squash, Alabama chèvre, and fresh herbs paired with Peter Lehmann Layers White 2010, Barossa and Adelaide, Australia. A dessert selection: Roasted Pear and Hazelnut Parfait, layered with roasted-pear mascarpone, hazelnut nougat, and zinfandel-poached pears paired with Marqués de Cáceres Satinela 2009, Rioja, Spain.

We are right in the middle of a bustling holiday season at our house. What a wonderful time of year! It’s my favorite. We have had so many of you coming over to celebrate the season! Guests come in their holiday finest, bringing gifts, laughing, sipping champagne. Such a happy time! For our complete holiday hours, click here.

We are getting ready to celebrate the beginning of a new year with a four-course wine dinner on New Year’s Eve. We will have two seatings to accommodate those wishing to participate in this year’s Pensacola Pelican Drop Celebration on Palafox. We will also have a complimentary champagne toast and live music from  Jerry Dawson of The Shiz accompanied by band members of The Astronauts. Down on Palafox Street, our Great Southern Events team will be hosting New Year’s Eve in the courtyard on the corner of Palafox and Government streets. There will be a bar serving delicious raspberry margaritas, mixed drinks, beer and wine. Chef Irv Miller from our sister restaurant, Jackson’s Steakhouse, will be serving a Pensacola Cheese-Steak Sandwich with caramelized onions and hot pepper cheese sauce for $7.00. The courtyard will open at 5:00 p.m. for bar service with sandwich service beginning at 6:00 p.m. Be sure to stop by and say hi so we can wish you a happy 2012!

2012 will bring Great Southern Restaurant Week. The Fish House, Jackson’s Steakhouse and Atlas Oyster House will once again team up to present Winter Restaurant Week, January 24 – 28, 2012. Now that October is finally here, many people start thinking about the usual fall festivities — like football, leaves changing color, and cooler weather. But personally, I think of Halloween! At my house, the month of October is spent deciding the theme of this year’s haunted house, making the subsequent gory decorations and transforming the yard into a creepy scene of blood, guts and pretty much anything that will terrify the neighbors.

Also, one of the best parts of the holiday is seeing all the creative costumes, and, of course, throwing the perfect Halloween party so that all your friends have a place to show them off. So while everyone else is thinking of the perfect costume to wow their friends, I decided (more…)

“You’re with ‘Morning Joe’ from beautiful Pensacola, Florida.’’

That’s the message sent out across the nation early Thursday morning as the MSNBC morning news/talk show broadcast live from The Fish House in downtown Pensacola.

About a dozen people nibbled on muffins and bagels inside the waterfront restaurant, watching the program on television screens. Outside, just feet away, Scarborough sat behind a bistro table with notes and paperwork in front of him, bright lights and cameras shining his way.

The show airs from 5 to 8 a.m. weekdays on MSNBC.

Nothing is better than living on the Gulf Coast — unless, of course, you are also taking advantage of the local fruits de mer (French for “fruits of the sea”), such as fresh clams, oysters and plump shrimp. I love when locals talk passionately about the fresh Southern coastal cuisine we have here in Pensacola. I enjoy nothing more than watching fishing boats bringing into Seville Harbour fresh-caught snapper and shellfish, which go straight into the Fish House and Atlas Oyster House’s kitchens.

Some of my favorite local customers have celebrated one of the biggest days of their lives with us here in one of our private rooms overlooking Seville Harbour and Pensacola Bay. With their love of seafood and good wine, it was easy to prepare the menu and theme for their perfect wedding reception. This week, I want to go over some great ways of pulling off a Fruits de Mer Party for any occasion — whether it is a wedding reception or just a gathering of close friends.

Nothing beats the summer heat like a Fruits de Mer display of chilled cocktail shrimp and fresh Apalachicola oysters. Any kind of shellfish, from snow crab to lobster tails to fresh steamed mussels and clams can be incorporated into your food display. To make things easier on you, the chef, I recommend precooking most of the items, such as the cocktail shrimp, snow crab and various sauces the day before. (more…)

Would you drink it in a box?

Viña Borgia is a rich garnacha (grenache) from the Aragon-Campo de Borga region of Spain. Full of rich berries and spice, it’s a nice pour for anyone at about $8 a bottle.

They have a new package out — a 3-liter box — four bottles worth for about $19. Same flavors, takes up less space, stays fresh inside a sealed interior bag, smaller carbon footprint, less money. All good, right?

I’m thinking back seven years ago when Stelvin closures (screw caps) began popping up where corks had been before. I recall there was a pretty serious pushback from the wine community then. But we lived through it, and Stelvins are accepted nearly everywhere.

But what about the box?

Would I be happy to be served this wine in a box at a social event? Of course. On the beach where glass is forbidden? Genius. As an option at a small diner that doesn’t sell wine very often? Great wine will stay fresh in this box. As a cooking wine? I’m in — all stainless fermentation and big fruit flavors are great for wine reductions. Serving at my house? Not just yet. Give me few years in group therapy with the other “Wine Time” writers and we can revisit.

Will I drink this boxed wine?

Yes, I will.
