The Happy Hour —Why it’s important to socialize after work

My father had a business when I was growing up. I used to work for him after school and in the summers. On Friday afternoons, I would tag along with him and the rest of my coworkers after work to a bar across the street from the office.

I wasn’t old enough to drink, and most of my friends thought it would be boring, but it was my favorite thing to do — because at happy hour, I learned the most. This weekly ritual seemed so magical to me. I knew how difficult the week had been, the deadlines and meetings with clients, but at happy hour, all of that turmoil seemed to disappear. My father and his friends would tell stories and jokes about the week and about each other. Clients and potential clients would show up to seek advice or to just join in on the fun. After awhile, I realized this wasn’t just a few people drinking after work; this was when a lot of the important business really got accomplished. Deals were made, alliances formed, and conflicts resolved.

The Pensacola Jazz Festival this weekend at Seville Square.  The square is only steps away from our restaurants.  

The Pensacola Jazz Festival, now in its 27th year, is a FREE all-jazz festival held in downtown, historic Seville Square. The Jazz Society of Pensacola (JSOP) produces the event with able assistance from a variety of corporate sponsors and community organizations. The 2-day festival, held in early spring each year, celebrates America’s unique musical art form-Jazz. JSOP works all year to present this festival as its annual gift to the community, and we sincerely thank our individual and corporate donors for their essential support.

With its beautiful live oaks and historic surroundings, Seville Square Park offers a perfect springtime setting for the Pensacola JazzFest. A state-of-the-art sound system brings the music to wherever you are in the park. In addition to the great music lineup, food, drinks and jazz merchandise will be offered for sale at reasonable prices. A new offering in 2009, an Arts & Crafts Exhibition was a big success and will return in 2010 with even more exhibitor booths.  JSOP will have tents and volunteers set up for purchase of JazzFest posters, a variety of jazzy shirts and memorabilia, plus beer and wine and soft drinks (please note that the JSOP merchandise sales help support the festival). In addition, local area venders will offer some tasty food options for the hungry jazz listeners. Some seating is provided, but your favorite reclining lawn chair will make it just right. Please do not bring your pet dog, however, since Pensacola city ordinance prohibits dogs in the park.

Avoid culinary catastrophes with these simple tips

With the popularity of foodie magazines, culinary blogs, the Food Network and movies like Julie and Julia, the quest for better cooking skills is a widespread obsession. Cooking is often a process of trial and error, but eventually we learn from our mistakes.

At Jackson’s we polled a few friends, the staff and our own Chef Irv Miller to find out some of their most common culinary mishaps. Hopefully you’ll learn to create an extraordinary feast and not a gourmet mess.

Here are the top 5 most common cooking blunders that happen around Pensacola:

1. Not sampling as you go – taste throughout the cooking process to make sure your flavors are on track.
2. “Estimating” measurements instead of using measuring spoons/cups – don’t guess when it comes to most ingredients or you could end up with salty cookies.
3. Not reading the entire recipe before you start cooking – you might be out of an essential ingredient or realize one part needs to be chilled first.
4. Cutting meat too soon and not allowing it to rest after cooking – the juices redistribute throughout meat after cooking so wait about 10 minutes before slicing.
5. Adding food to the pan before it heats up – Food won’t cook properly or evenly if the pan isn’t sufficiently heated up.
