BREAK THE CHAIN

Tuesday, December 22nd, 2009

Chain restaurants offer basically the same exact menu, prepared and served up in a replicated atmosphere, city to city. That’s their whole objective, to deliver an identical experience over and over, whether you’re in Los Angeles or Lower Alabama. Locally owned and operated restaurants offer one-of-a-kind dining options that are far from cookie cutter. Eat Your Way to Prosperity this New Year with Good Luck Food

Wednesday, December 16th, 2009

‘Hoppin’ John’ is a popular New Year’s Day dish counted on to bring good luck to traditionalists throughout the South.  Made of black-eyed peas, rice, and ham, each ingredient represents good fortune that culminates in a year of prosperity when eaten at the stroke of midnight.  For those of you planning on celebrating New Year’s Eve downtown, we encourage you to stop by Jackson’s at midnight for your own sampling as we will be serving complementary Hoppin” John to all!

Ham, or pork, makes its claim to positivity because pigs root ahead as they feed, which represents forward motion.

In 1599 British author Henry Buttes wrote, “It is unseasonable and unwholesome in all months that have not an ‘r’ in their names to eat an oyster.” Back then, it was believed that in warmer months (those without an “r”) oysters were unsafe to eat. The oyster is also spawning during this time, which gives it a unique texture and flavor. Many oyster lovers have learned to either ignore or embrace this taste, making the “r” month myth a thing of the past….until recently. (more…)

Hot Culinary Trends – Figs are Fabulous

Thursday, December 3rd, 2009

Figs have come a long way since their cookie filling days. Gourmet kitchens throughout the country pair the sweet fruit with crisp bacon and smoky cheeses for delicious appetizers. Chefs sauté figs with wine and delight diners with juicy surprises in salads and sauces. They even find their way to fancy cocktail parties as a sidekick to goat cheese and a cured ham. Even on Bravo’s Top Chef, they are featuring the fig. The fruit’s short season heightens demand and makes it a culinary star in many Fall recipes. (more…)
